Olive Oil Orange Cake
We’d like to name this the OOO cake. Besides the obvious (olive oil orange), it could also mean OOO, out of office, as this cake is good enough to switch it on whilst you devour. Or “OOO!” , the sound that people make when they taste this glorious bake. You choose. 🤤
This cake has become a staple for our community as it is simple, delicious and very moorish.

The olive oil is behind the moist crumb 👀 it’s really easy to whip up, here’s the recipe:
What you’ll need:
200g caster sugar
3 unwaxed oranges (unwaxed otherwise they are tricky to zest)
Juice of zested 3 oranges
240ml the nicest extra virgin olive oil
3 free range eggs
200g self raising flour
1/2 tsp baking powder
Pinch of salt
Icing sugar to decorate
To bake:
Preheat your oven to 180C 🔥
Line your 8 inch cake tin
Zest all three oranges
Pour sugar into a bowl along with zest and combine
Measure out olive oil, then add in your orange juice and mix
Pour into your sugar and orange mixture and fully combine
Add your three eggs and combine
Sieve in your flower and baking powder, add salt, fold in, give the the mix a very brief whisk to remove any lumps so the mixture is a nice smooth batter. But try not to over mix!
Pour into your tin and bake for 35 mins or until the knife comes out clean.
Leave to cool, then sieve over a dusting of icing sugar or any other topping of choice. ✨
