Matcha & White Chocolate Macarons
Oh macarons, you make us feel so special. These shells of sweetness, sandwiched with something delicious have the ability to transport you to a quaint Parisian patisserie. A true delicacy and a very fun bake!
They are a little challenging, but have the most satisfying result. You can play around with the flavours, but here we are creating matcha macarons with a white chocolate ganache filling.

They take all the credit for the method and tips behind these macarons - so I am going to hand over to their masterclass. Before I do, here is the recipe I used for matcha & white chocolate macarons:
White Chocolate Ganache
170g chopped white chocolate
60ml double cream (1/4 cup)
Combine chocolate and cream in a microwaveable bowl, zap for 30 seconds at a time and mix well with a wooden spoon until melted, combined and smooth. Cool for around 10 minutes, then using either a stand mixer or hand held - whisk until lighter in colour and fluffy!
Matcha Macarons
205g icing sugar
190g ground almonds
7 grams matcha powder
144g egg whites
190g caster sugar
60ml water
Preheat oven to 165C (fan assisted) and prepare baking trays with templates if you’d like!
